In 2015, Teddy Lee opened the first Maki & Ramen in Edinburgh after training in Japan. Inspired by the art of sushi making and the communal joy of Japanese cuisine, Teddy established a brand founded on inclusivity, togetherness, and enjoyment
Surrounded by a team as passionate and dedicated as himself, Teddy has ensured that everyone from the front of house staff to the kitchen team is deeply involved and invested in the growth and success of Maki & Ramen
